PUMPKIN COOKIES
2 1/2 cups All Purpose Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
3 TBSP Cinnamon
1/2 tsp. Ground Nutmeg
1/2 tsp. Salt (optional)
1 1/2 cups Sugar
1/2 cup Butter, softened (1 stick)
15 oz can Pure Pumpkin (I like to use Libby’s)
1 Large Egg, room temp.
1 tsp. Vanilla Extract
1 cup Semi-Sweet Chocolate Chips
GLAZE
2 cups Powdered Sugar
3 TBSP Milk
1 TBPS Butter, melted
1 tsp. Vanilla Extract
Preheat oven to 350
Sift together the Flour, Baking Soda, Baking Powder, Cinnamon, Nutmeg and Salt. Set aside.
In a mixing bowl, cream the Butter & Sugar.
Incorporate the Pumpkin to the mixer.
Beat in the Egg and Vanilla.
Gradually add the sifted ingredients into the mixer. (I usually do this in 3 increments)
Beat until well combined.
Stir in the chocolate chips.
Drop by spoonfuls onto an ungreased cookie sheet or baking sheet with parchment paper.
Bake at 350 degrees for 15-18 minutes (please note, all ovens may vary… so keep a close eye on your first batch!!).
Once out of the oven, let cookies sit on baking sheet for about a minute, then transfer to a cooling rack until completley cool.
In the meantime… make the glaze… by adding all ingredients together… then drizzle as much as you would like over the cooled cookies!
