Wondering what sweet treat to bring to your Wine Tasting Party?? This Red, Red Wine….Taste So Fine… Cupcake is BEYOND PERFECT for the occasion!!!!
The cake is made with a moist chocolate base (yummy!) mixed with your favorite Red Wine baked right into the batter (Oh Yeah!!!)
You can also use your favorite frosting… and since we LOVE Vanilla Buttercream, that’s what we used!! Chocolate Buttercream & Cream Cheese Frosting would also be super yummy!!
You need:
1 Cup Butter, softened (2 sticks)
1 1/2 Cups Sugar
4 Large Eggs, room temp
1 1/4 Cups Flour
1 1/2 tsp. Baking Powder
3/4 Cup Red Wine
1/2 Cup Cocoa Powder
5 oz Chocolate Chips (about 3/4 cup)
1/2 Cup Boiling Water
HOW TO:
Preheat oven to 350 degrees. Mix cocoa powder and chocolate chips in a heat safe bowl. In a separate bowl, combine flour and baking powder, set aside.
In a mixer, beat butter until white and fluffy, add sugar… and beat well. Add each egg one at a time until thoroughly mixed.
Add in the flour mixture, until incorporated.
Boil the water and pour over the cocoa powder & chocolate chips… mix until smooth.
Add the melted chocolate mixture to batter and mix well.
Then pour in the Red Wine, mixing slow at first (preventing splashing) and mix well.
Batter is thick and creamy.
Scope with a spoon or ice cream scope half way up the cupcake liners.
Bake for 10-12 minutes or until toothpick comes out clean! Immediately remove cupcakes from pan and let cool completely on a wire rack before frosting with your favorite buttercream!
And don’t be intimidated with scratch cake mixes…as long as you don’t drink the entire bottle of wine while making it, they should turn out perfect!
