Buckeye Pretzel Bites

                                                        BUCKEYE PRETZEL BITES
  These little YUMMIES are soooooooooooo AMAZING, and you probably have the ingredients in your pantry to make them right now!!  WOOHOO! 🙂
 
You’ll need:
  • 1 Cup Creamy Peanut Butter
  • 2 TBSP Butter, Softened
  • 1/2 Cup Powdered Sugar (or more)
  • 3/4 Cup Brown Sugar
  • Pretzels
  • 1 Bag (12oz) Semi-Sweet Chocolate Chips
  • Sprinkles of your choice (if you want to get fancy)!


Line a baking sheet with wax/parchment/silicone mat, etc., and set aside.  In a mixing bowl, beat together the peanut butter and butter until creamy.  Add the brown sugar and powdered sugar until well incorporated.  You should be able to roll the mixture into balls without sticking to your hands.  If it’s sticky, ADD more powdered sugar until you reach a consistency that is easy to roll.

By teaspoons…. roll into balls, and place on prepared baking sheet.  Place one ball on a pretzel and smash another pretzel on top…. creating a wonderful yummy sandwich!

Once you have completed the process… place in the freezer for about 30 minutes.  While that’s getting hard in the freezer… start your water bath (double boiler) and melt your chocolate on medium/low heat.  Make sure not to burn your chocolate!!!  Once chocolate is melted… smooth… and smelling fabulous… take pretzels out of the freezer & dip each pretzel bite halfway into the chocolate and place back onto the baking sheet.  Here is where you can throw on your fancy sprinkles or leave as is. 🙂

 
  When your baking sheet is full… place in the refrigerator until chocolate is set and there you have it!!  WONDERFULNESS!!! 🙂
