CHOCOLATE PUMPKIN CUPCAKES

Yes, that’s RIGHT!!!!  These little YUMMIES are Gluten Free, Vegan, NO sugar added, Pumpkin, Chocolate Chip Cupcakes!!!

Let’s face it, it’s very hard to find YUMMY recipes that actually fit the needs of a gluten free, vegan diet!!!  But these little cupcakes are just the thing!!!  You won’t believe how good these taste and there are ONLY 4 ingredients!!!

Now, if you do not have any issues with gluten or vegan diets – I have made this recipe before (PERFECT PUMPKIN MUFFINS) with regular ingredients and it is also AMAZINGLY yummy!!  But honestly, even if you aren’t vegan or gluten free, you will be really surprised how much you will like this recipe!  🙂  So let’s get started!!!

YOU NEED:

GLUTEN FREE CAKE MIX (I used Chocolate, Vanilla is also a YUMMY choice)

PURE PUMPKIN, 15 oz. Can

ALMOND MILK – 3 TBSP

GHIRARDELLI SEMI-SWEET CHOCOLATE CHIPS (Dark Chocolate also works!)

How To:

Preheat Oven to 350.  Line Mini Cupcake Tins with paper liners (I used Pumpkin Liners  to get into the season!)

Slowly Blend with Mixer – Cake Mix, Pumpkin and Almond Milk.

Add Chocolate Chips (I added the entire bag, but you can add less).

Scoop small amounts into each liner and bake 10 – 11 minutes depending on your oven.

Store in an airtight container up to 3 – 4 days.
