Easy Peasy Salty Toffee Cookies!

EASY PEASY SALTY TOFFEE COOKIES

You Need:

4 oz. Saltine Crackers (1 sleeve)

1 Cup Butter (2 sticks)

1 Cup Brown Sugar (dark or light)

1 tsp Vanilla

2 Cups Semi-Sweet Chocolate Chips

3/4 Cups Pecans, chopped  (optional)

How To:

Preheat oven 400 degrees.

Spray cookie sheet with baking spray and place parchment paper on cookie sheet allowing the paper to hang over the edge a little so that it’s easier to pull out of the pan when done.  If you do not have parchment paper, you can use foil.  Please use something… because it is impossible to get out of the pan if you use nothing!!!  I find these things out the hard way, so you don’t have to!!! 🙂

Line cookie sheet

Line saltine crackers in a single layer, covering entirely, and set aside.

* You can break the crackers to better fit them into the corners.*

Combine ingredients

In a sauce pan, combine sugar, butter and vanilla.

Boil for 3 minutes!

Bring to a boil for approximately 3 minutes!!

Careful pouring... it's HOT!

Immediately pour over saltines and spread to completely cover crackers.

Should look like this!

Bake at 400 degrees for 5 – 6 minutes.

Sprinkle with Chocolate Chips

Remove from oven and sprinkle chocolate chips over top.

Put back in oven for 2 – 3 minutes just to let the chips melt a little.

Spread evenly

Evenly spread melted chocolate chips over crackers.

Sprinkles

Top with chopped pecans and/or sprinkles!

We added birthday sprinkles! 🙂

Cool completely and break/cut into little pieces!

    These look so yummy! I love the colorful little sprinkles on top! I bet it would be hard to eat just one piece! 😉
