Yummy No-Bake Energy Nuggets!

Now these Yummy No-Bake Energy Nuggets are just down-right-AMAZING!!!  All the sweetness, without the GUILT!!!!  WOOHOO!!! And so easy to make!!!!  You can substitute a lot of the ingredients according to your likeness… and just have fun with it!!  These are a super yummy before or after school snack, great for a long hike, or for a post work-out treat!!!  I could give you a hundred excuses why to eat them, but you don’t really need any!!!  Just go for it!!! 🙂

Here’s What You Need:

1 Cup (dry) Old Fashioned Oatmeal

2/3 Cup Coconut Flakes, toasted or not

1/2 Cup Peanut Butter

1/2 Cup Wheat Germ or Ground Flaxseed (I used Wheat Germ)

1/2 Cup Chocolate Chips

1/4 Cup Rasins (optional)

1/3 Cup Honey

1 tsp. Vanilla

Stir all ingredients together in a medium size bowl until thoroughly mixed.  Let chill in the refrigerator for about 20 minutes.

Once chilled, roll into balls of whatever size you would like.  I made mine really small and was able to get about 40.

You can substitute the Peanut Butter for Almond Butter, Cashew Butter, or any other Nut Butter you would like.

You can’t mess this recipe up!!!!

Just keep adding the things that you like, and if it’s too sticky… add more dry ingredients.

 If it’s not sticky enough, add more honey or peanut butter.

 Store in an airtight container and keep refrigerated!
